An Interview with our Head Chef : Dhiraj Kumar
We thought it was time you got to know the wonderful team at DoubleTree by Hilton Cheltenham a little better, so we’d like to start by introducing you to our talented Head Chef, Dhiraj Kumar.
We asked Dhiraj a few questions about how he got to where he is today and his future plans for our favourite restaurant in Cheltenham…
What was your very first job in a kitchen?
I was a Commis Chef in Deli (India), where I studied for many years.
What ingredients are you enjoying working with right now?
I’m loving working with local fresh meat suppliers where I can access the best of local produce to deliver great food.
Do you grow anything yourself?
I have many skills, being green fingered is not one of them unfortunately.
Which piece of kitchen equipment couldn’t you live without?
My knives are my tools of the trade, without them, I would not last an hour. To a Chef, their knives are something very personal, and I am very protective of mine.
Proudest career achievement?
I was the youngest person to earn a Head Chef position within Mercure hotels.
Who is your biggest inspiration?
Chef Vikas is a great inspiration. His innovation and creativity are something to behold.
What is your favourite dish currently being served at DoubleTree by Hilton Cheltenham’s Lakeside Restaurant?
The Chef Special Homemade Curry is my particular favourite at the moment. Its smooth, packed full of flavour and guests love it!
What plans do you have for our menu here at DoubleTree by Hilton Cheltenham?
We will be changing the menu very soon to cover international cuisine. We will be introducing great new concepts but most of all great food that our guests will love. A taste of home away from home.
